We are going to explore two hot topics in winemaking! Native Fermentations and Indigenous grape varietals. Native ferments refer to letting the yeast already present on the grape skins complete the fermentation vs. using commercial yeast. In addition, there is a movement to explore grape varietals that are indigenous to that region and stay "local" vs. the international grape varieties. Join us as we explore some of these themes.
